Tofu and Spice Breakfast Wrap

Here’s another tasty morning treat packed with flavor! Easy to make but allow for a little extra cooking time in the morning.

one small carrot diced

1/2 a zucchini cut into 1/4 inch cubes

1/4 block of tofu cut into 1/4 inch cubes

1/4 of a red pepper cut into 1/4 inch cubes

1/4 of a yellow pepper cut into 1/4 inch cubes

1/4 of a small onion diced

1 stalk of green onion thinly sliced

extra virgin olive oil

spices to taste: cumin, coriander, salt, pepper, chili powder

2 whole wheat flour tortillas (10 inch)

Heat oil in pan just under medium heat. Add onion (but not green onion), tofu and spices and cook until onions are soft and tender. Stir frequently so that the tofu doesn’t stick. Add the other vegetables and cook until tender but a bit crunchy still. Spoon mixture onto tortilla near the bottom. Sprinkle some green onion on top. Then roll tortilla from bottom up while folding in the sides. You can also wrap the tortilla up in tin foil to take it on the go.

Variation: try adding some grated cheese before you roll up the tortilla. Cheddar will do just fine!

Blueberry Breakfast Wrap

Blueberry Breakfast Wrap

Here is a quick and easy breakfast item that is super dee-lish! Please remember that I don’t use exact measurements when I cook. Remember to open your intuition and follow your heart.

a handful or organic granola

a small container of organic vanilla or plain yoghurt (either dairy or soy)

a handful of fresh washed organic blueberries

Combine banana, maple syrup, yoghurt and granola in a bowl. Then mix in blueberries.

a spoon of almond butter (or peanut butter or cashew butter)

a dab of maple syrup (or honey)

2 torillas (10 inches)

Combine banana, syrup, yoghurt, granola in a bowl. Then add in blueberries. Spread almond butter onto each tortilla. Spoon berry mixture onto each tortilla (be careful to not add too much!). Add berry mixture to the bottom half of the tortilla and then roll it up from the bottom while tucking in the edges. You can also wrap it up in tin foil if you need to take it on the go.
